Sweet Potato Casserole

Ingredients

  • 1 Teaspoon Vanilla
  • ⅓ Cup Milk
  • ½ Cup Melted Butter
  • ¾ Cup Sugar
  • 3 Cups Mashed Cooked Sweet Potatoes (40oz Can)
  • 2 Eggs, Well Beaten
  • ½ Teaspoon Cinnamon
  • ½ Teaspoon Nutmeg

Directions

Pre-heat oven to 350° F

Combine all ingredients, mixing well with electric mixer.

Pour into greased 8x8 casserole. Cover with topping and bake for 35 mins.

Makes 8 servings

NOTE: Double recipe bakes for an hour.

Sweet Potato Casserole Topping

Ingredients

  • ½ Cup Pecan
  • 2½ Teaspoon Butter
  • ¼ Cup Flour
  • ½ Cup Sugar

Directions

Combine all ingredients with fork or pastry cutter until resembles course meal.

Sprinkle on top of sweet potato casserole, then bake per directions.
