Orange Chicken Stir-Fry


Ingredients

  • ¼ cup sugar
  • ⅓ cup soy sauce
  • 1 cup orange juice
  • 4 green onions, cut into ¼ inch slices
  • ¼ teaspoon hot sauce
  • 1 teaspoon freshly grated gingerroot
  • 2 tablespoons grated orange rind
  • 6 chicken breast halves, cut into 1 inch chunks
  • 3 tablespoons vegetable oil
  • 1½ tablespoons cornstarch
  • Hot cooked white rice

Directions

Pour oil around top of preheated wok, coating sides; allow to heat at medium-high for 2 minutes. Add chicken and stir-fry 2 minutes or until lightly browned. Remove from wok, and drain well on paper towels. Add orange rind, gingerroot, and hot sauce to wok; stir-fry 1.5 minutes.

Return chicken to wok; stir-fry 3 minutes. Combine green onions, orange juice, soy sauce, sugar and cornstarch; mix well. Add orange juice mixture to chicken; stir-fry 3 minutes or until thickened. Serve over rice.
