Mash the garlic and combine with soy sauce, sugar and salt.
Cut meat in three lengthwise pieces. Lay meat in shallow dish and pour marinade over meat; refrigerate one hour, turning 2-3 times. Remove pork and lay pieces on rack in uncovered pan.
Preheat broiler 15 minutes. Place pan 6-8” below, medium heat. Bake 30 minutes or until one side is crisp. Turn meat, add a little remaining marinade and continue cooking until second side is crisp. Total cooking time is 1-1½ hours.
NOTE: Can use oven instead of broiler - cook at 350° for 1½-2 hours, or until thoroughly cooked.
