Beef Stew


Ingredients

  • 1 Cup Water or Beef Broth
  • 2 Pounds Bottom Round Roast, Cut Into Fairly Small Pieces
  • 2 Onions Chopped
  • ½ Cup Red Wine (or more)
  • 2 Tablespoons Chopped Parsley (Up to ¼ cup)
  • Carrots to Taste, Cut Into 1” Pieces
  • Egg Noodles

Directions

Salt and pepper beef and brown well on all sides in hot pan. Add wine and water or beef broth to cover meat. Add garlic, parsley, onions, and carrots. Adjust liquid as needed. Cover and simmer 1½ to 2 hours or until tender. Adjust seasonings and liquids and thicken to make gravy.

Serve over egg noodles cooked according to package directions. Once drained and rinsed, add a minimum of oil or gravy to prevent noodles from sticking together.

NOTE: Excellent recipe for the crock pot.
