Beef en Brochette


Ingredients

  • ½ Teaspoon Oregano
  • 2 Tablespoons Red Wine Vinegar
  • 1 Teaspoon Thyme
  • 1½ Cups Red Wine
  • 1 Teaspoon Salt
  • 1 Cup Olive Oil
  • ¼ Cup Parsley
  • 2 Cloves Garlic

Directions

Cut meat into 2” cubes; marinate covered in refrigerator 3-5 days (overnight at least). Meat should be mostly covered with marinade. Turn or stir meat daily.

Preserve marinade for basting.

Microwave green pepper pieces and onion halves or small onions till slightly soft.

Thread meat, green pepper, onion, tomato, mushrooms, repeat on skewers. Grill over coals until meat is cooked to medium.
