Pre-heat oven to 300° F
Combine oil and sugar then blend in eggs. Add sifted dry ingredients. Mix. Add vanilla and lemon extract, mix. Then fold in apples and nuts.
Bake in greased 9” by 13” pan for 1 hour and 20 minutes until toothpick comes out clean.
