Cranberry Bran Muffins


Ingredients

  • 1 Cup Chopped Walnuts or Pecans
  • Juice of One Orange
  • Zest of One Orange
  • 1½ Cups Packed Dark Brown Sugar
  • ¼ Teaspoon Baking Soda
  • ¾ Teaspoon Salt
  • 2 Eggs
  • 1 Stick Butter, Melted and Cooled
  • 1½ Teaspoons Baking Powder
  • 2 Teaspoons Vanilla Extract
  • 1½ Cups Wheat Bran Cereal
  • 1¼ Cups and 2 Tablespoons Buttermilk
  • 2 Cups Flour
  • 1½ Cups Fresh, Frozen, or Dried Cranberries

Directions

Pre-heat oven to 350° F

Spray muffin tin(s) with cooking spray.

Soak bran cereal in milk to soften. Meanwhile, zest the peel of one orange and squeeze the juice into the mixture.

Combine dry ingredients.

When cereal is completely softened - add eggs, vanilla, oil, cranberries, and nuts to cereal; mix well. Add to flour mixture and stir until just moistened.

Fill muffin tins and bake for 30 minutes or until cooked through and golden brown.

Makes 2 dozen.
