Mix yeast in water, let stand 5-10 minutes.
Blend flour, salt, sugar, and yeast mixture - add 3½ scant cups warm water. Beat thoroughly then let stand in warm place until batter puffs. Refrigerate until needed.
Best if mixed night before breakfast.
Do not beat batter before cooking-stir only slightly. Cook on greased griddle at medium temperature.
